Born and raised in Queens, Chef Serafino Zaccone is the son of two Italian immigrant parents and grew up in a household of rich culture and strong Italian traditions. With a father who managed restaurants and a mother who worked in the hospitality field, the restaurant/hospitality business was simply a matter of fate for Serafino.
As a child and young adult, he spent extensive time traveling to Italy to become more acquainted with his roots and Italian heritage. Serafino spent years working in the hospitality and banquet business in Queens at upscale establishments, such as Spolini’s and Villa Russo on the Bay. Eventually, Serefino ventured to Saratoga Springs, NY and began working in various chef positions at Sergio’s, Forno Bistro, Mama Mia’s and Panza’s and had the opportunity to learn from some of Saratoga’s best chefs. Chef Zaccone also is a graduate of Schenectady Community College’s. a well respected Culinary Arts program.
In 2014, Serafino finally decided it was time to venture out on his own and create his own Italian restaurant, with an emphasis on his two loves, authentic Italian food and family. Today, Serafino and Joe Krason own and operate Three Vines Bistro. The atmosphere is nothing short of warming and welcoming. As Executive Chef, Serafino shines light on simple yet authentic Italian dishes and takes pride in maintaining a daily scratch kitchen. Every item--from the dough to the cannoli cream--is made in house daily. Making sure everyone can come and enjoy the love of food and togetherness, Chef Zaccone pays close attention to suiting the needs of everyone. With this being said, customers will always find special options that suit the needs of vegetarians, vegans, and gluten free customers alike.
